Waffled Omelettes made with spinach, sweet mini peppers, and red onion and topped with mashed avocado, a dollop of harissa, bagel seasoning, and micro greens
1.To make omelette waffles, sauté veggies in a pan until they’re just soft (I used 3 peppers, 1-2 cups spinach, and 2 tablespoons chopped red onion).

2.In a big bowl, whisk together 2 eggs with salt and pepper. Add sautéed veggies, and mix together. Spoon into a preheated waffle iron (med high, use come cooking spray before so it doesn’t get stuck).

3.Cook for about 4 min in the waffle iron until eggs are cooked and golden. Remove carefully with a fork. Top with whatever suits your fancy.
