- 2 tbsp cashews
- handful basil leaves
- handful chopped kale
- 1 crushed garlic clove
- 2 tbsp nutritional yeast
- juice of 1/2 lemon
- salt & pepper
- little olive oil
- Spread a thick layer of pesto on each slice
- Add some vegan cheese
- Add avocado slices
- Saurkraut or pickles
- Toast the sandwich in a griddle pan (or just regular) until crispy and golden brown around the edges.
