Toasted Pesto Avocado Sandwich!


  • 2 tbsp cashews
  • handful basil leaves
  • handful chopped kale
  • 1 crushed garlic clove
  • 2 tbsp nutritional yeast
  • juice of 1/2 lemon
  • salt & pepper
  • little olive oil
Sandwich:
  1. Spread a thick layer of pesto on each slice
  2. Add some vegan cheese
  3. Add avocado slices
  4. Saurkraut or pickles
  5. Toast the sandwich in a griddle pan (or just regular) until crispy and golden brown around the edges.
