Waffle brunch


  • Oat banana waffles
  • 1,5 cup oats
  • 1 tsp baking powder
  • 1 tbsp coconut sugar
  • 1/2 cup plant milk
  • 1 tbsp apple cider vinegar
  • 1 banana, mashed
  • 1 tsp vanilla extract

Combine milk and apple cider vinegar, set aside. Place oats in a food processor and process to flour consistency. In a mixing bowl combine oat flour, baking powder and sugar. Add milk mixture, banana and vanilla. Mix only until combined. The dough will be pretty thick. Bake waffles in a hot waffle iron, greased with a little bit of oil.
