- 150g steamed sweet potato chunks (about half medium sweet potato)
- half cup oats
- half cup almond milk
- 1 tsp apple cider vinegar
- 3 tbsp coconut sugar
- 1 tbsp chia seeds
- 2 tbsp cocoa powder
- 1/2 tsp baking soda
- pinch of salt
Mix almond milk and apple cider vinegar first and let sit for 2-3 minutes. After that time combine all the ingredients in a bowl and roughly blend until combined, leaving oat chunks (I used hand blender). Transfer to a small cake tin, greased with coconut oil or lined with baking paper. Optionally put some frozen berries or chocolate chips on top (I put few frozen raspberries) Bake in 180C for 35-40 minutes. You can eat it slightly warm or even scoop out with a spoon when still hot, but remember it will get firm when cooled down.
I served it with a simple chocolate sauce (1 tbsp peanut butter + 1 tbsp maple syrup + 1 tbsp cocoa powder) and blueberries.
