Sweet potato toast for brekkie as it starts to get colder

Slice 1 medium/large sweet potato lengthwise about 1/4 inch apart. Brush with olive oil on both sides and bake on parchment at 400F until just cooked and slightly golden browned. Let cool. Add your favorite sweet or savory toppings.
