SINGLE-SERVING BLUEBERRY BANANA BREAD


  • 1 tbsp. coconut oil/butter/ghee
  • 1 egg (you can use a flax egg, but the bread doesn’t set as much)
  • 1 small ripe banana (mashed)
  • 1/4 tsp. baking powder
  • 4 tbsp. almond flour
  • 1/2 tsp. cinnamon
  • 2-3 tbsp. blueberries
  • 1 scoop collagen (optional)
  • 1/2 tsp. maca powder (optional)


DIRECTIONS:

In a microwaveable mug, melt the coconut oil (about 20-30 seconds). Let it cool for a few seconds, then whisk in the egg and mashed banana. Stir in the dry ingredients, fold in the blueberries, and microwave for 2 1/2 minutes!
