Avocado Soba:
Serve immediately with roasted mushrooms and enjoy!
- In a bowl, add a peeled and diced avocado, 1/2 tsp lemon juice or apple cider vinegar, salt, pepper, 1 tbsp nutritional yeast (optional), 1 tbsp water. Mash with a fork until creamy. Cover and place in the fridge.
- Meanwhile, boil some water and add the soba noodles. Cook for about a minute without stirring. Drain in a strainer then lightly rinse under running water (don’t rinse other pastas). Add to avocado and stir coat (I used my hands for this...much easier).
Serve immediately with roasted mushrooms and enjoy!
