Cake:
- 1 tbsp melted coconut oil/butter/ghee
- 1 egg
- 1/4 cup almond milk
- 1/4 cup almond flour
- 3 tsp. coconut sugar
- 1/2 tsp. baking powder
- 1 scoop ‘gather paleo plant protein’ powder
- 2 tbsp. crushed peppermint
- 2 tbsp. chocolate chips
Directions: Use a fork to whisk the egg and oil/butter together in a large mug, add the rest of the ingredients, and microwave for 2- 2 1/2 minutes!
