Pancake Mix Gingerbread Banana Bread

Ingredients
  • 2 cups complete pancake mix (can use Gluten-free mix)
  • 1 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp. nutmeg
  • 3 small bananas, mashed (or 2 large)
  • 2 eggs, beaten (sub flax eggs for vegan option)
  • 1/2 cup milk (non-dairy or dairy)
  • 2-4 Tbsp. molasses (depending on how sweet you like it)
  • Additions:
  • 1/2 cup white chocolate chips
  • 1 cup cranberries (fresh or frozen)
Instructions
  1. Preheat oven to 350 and spray a loaf pan with oil (or line with parchment paper) and set aside.
  2. Add pancake mix and all spices in a large bowl and set aside.
  3. Mix mashed banana, eggs, milk and molasses in a separate bowl and add to dry ingredients. Mix well.
  4. Add cranberries and white chocolate chips to batter and mix well. Pour into loaf pan.
  5. Bake for 30-35 minutes or until done.
