Ingredients
- 2 cups complete pancake mix (can use Gluten-free mix)
- 1 tsp. ground ginger
- 1 tsp. cinnamon
- 1/4 tsp allspice
- 1/4 tsp. nutmeg
- 3 small bananas, mashed (or 2 large)
- 2 eggs, beaten (sub flax eggs for vegan option)
- 1/2 cup milk (non-dairy or dairy)
- 2-4 Tbsp. molasses (depending on how sweet you like it)
- Additions:
- 1/2 cup white chocolate chips
- 1 cup cranberries (fresh or frozen)
Instructions
- Preheat oven to 350 and spray a loaf pan with oil (or line with parchment paper) and set aside.
- Add pancake mix and all spices in a large bowl and set aside.
- Mix mashed banana, eggs, milk and molasses in a separate bowl and add to dry ingredients. Mix well.
- Add cranberries and white chocolate chips to batter and mix well. Pour into loaf pan.
- Bake for 30-35 minutes or until done.
