Ingredients:
- 1 tbsp of olive oil
- 2 cloves of minced garlic
- 3 1/2 cups of sliced white mushrooms
- 1 cup of cooked green lentils
- 1 tbsp of chili powder
- 1 tsp of cumin powder
- 1/2 tsp of salt
- 1/2 tsp of oregano
- 1/2 tsp of black pepper
- 1/2 cup of minced yellow onion
- 1 minced jalapeño
- flour tortillas.
1. In a pan on medium heat add olive oil and garlic, cook until fragrant and add mushrooms, lentils, and seasoning.
2. Stir well and allow to cook for 5 to 8 minutes stirring occasionally. Once time is up transfer filling into a blender.
3. Give filling a few good pulses but avoid over pulsing. Next add onion and jalapeño and mix in to filling.
5. Preheat oven to 400°. Grab tortillas and with a spoon scoop filling onto each tortilla, evenly shape filling and roll up taquitos tightly.
6. Place in oven for 10-15 minutes each side. Once time is up remove from oven. Garnish with sauce of choice and enjoy.
(If you want to fry them directions- To fry preheat oil to 350° in a large pot. Once oil is ready place taquitos into pot three at a time and fry for two minutes each side. Allow taquitos to cool and drip dry for a few minutes. Enjoy!)
