Easy Vegan Puttanesca

Ingredients:
  • 6 very ripe roma tomatoes (diced)
  • 1 small brown onion (diced)
  • 1 large clove of garlic (crushed)
  • 1 small red chilli (diced)
  • 1 heaped tablespoon of tomato paste
  • 1 teaspoon of dried thyme leaves
  • 1 tablespoon of olive oil
  • Olives
  • Capers
  • Salt and pepper (to taste)
  • Fresh basil and/or thyme (to serve)
Method:1. Heat the olive oil in a frying pan, then sauté the onion and garlic.
2. Add the chilli, tomatoes, thyme and tomato paste, then bring to the boil. Reduce to a simmer, and continue cooking until the sauce has reduced (stirring occasionally). 3. Add the remaining ingredients, then serve with pasta.
