- 6 very ripe roma tomatoes (diced)
- 1 small brown onion (diced)
- 1 large clove of garlic (crushed)
- 1 small red chilli (diced)
- 1 heaped tablespoon of tomato paste
- 1 teaspoon of dried thyme leaves

- Olives
- Capers
- Salt and pepper (to taste)
- Fresh basil and/or thyme (to serve)
