GREEN GRILLED CHEESE SANDWICH

LAYERS:
  • Bread of your choice (I love sourdough)
  • Layer of pesto
  • Avocado
  • Layer of vegan cheese slice
  • Microgreens
  • Salt & pepper
  • More Pesto
  • Bread
Tips:
You can use a panini press or stove top - if you do it on a pan, make sure you use a little oil at the bottom to give it a nice browning and place the slices of bread separately on the pan with vegan cheese on top to melt.
If you don’t have vegan cheese you can use a thick layer of a “cheesy” spread you like, but for those who want to make your own pesto check out the recipe below:

VEGAN PESTO - BLEND:
  • 2 cups fresh basil
  • 2 cloves garlic
  • 2 tbsp nutritional yeast
  • 2/3 cup pine nuts / macademia nuts
  • 3-4 tbsp water
  • salt & pepper
