French toast roll-ups with apple and cinnamon filling

Ingredients

For the french toast roll-ups

  • 10 slices of white bread (on request gluten-free *)
  • 1/3 cup brown sugar
  • teaspoon cinnamon
  • 1/4 cup vegan butter

For the apple and cinnamon filling

  • small apples
  • 100 ml of water
  • tbsp brown sugar *
  • teaspoon cornstarch
  • teaspoon cinnamon
  • a pinch of vanilla
  • a splash of lemon juice (optional)

Instructions

For the apple and cinnamon filling:

  • Peel apples, core them and cut into small cubes.
  • In a pot of water, cornstarch, brown sugar, cinnamon, a little vanilla and lemon mix and bring to a boil, stirring constantly, so that it thickens.
  • Add the apples, mix well and set aside.

For the toast roll-ups:

  • Preheat the oven to 180˚C.
  • Cut off the crusts from each slice of bread. Then roll flat with a rolling pin.
  • Add about 1-2 tablespoons of the filling to the rolled-up slices of toast and roll into a wrap (see photos in the text above).
  • In a shallow bowl (or deep dish) mix brown sugar and cinnamon. Melt vegan butter and place in another flat bowl.
  • First dip the toast rolls into the melted butter and then toss in the sugar and cinnamon mixture.
  • Place on a baking sheet lined with baking paper and bake for about 15-20 minutes until crisp and slightly browned.
  • Serve warm immediately, if necessary with a dash of agave syrup if you want.
