RECIPE for 10 pancakes* 70g rice flour
* 50g chestnut flour
* 30g oat flour
* 20g coconut sugar
* 2 tbps cocoa powder, unsweetened
* Pinch of salt
* 1 tsp baking powder
* 1 tsp baking soda
* 1 tbsp lemon juice
* 2 eggs (or flax eggs)
* 150ml almond milk
* 1 tsp apple vinegar
* 2 tbsp coconut oil
* 1/3 cup extra dark chocolate chips (optional) In a small bowl whisk almond milk with apple vinegar and set aside.

In a large bowl, place flour blend, sugar, cocoa powder, salt, baking powder and whisk to combine well. In a small cup, place baking soda, combine with lemon juice and add it to the flour blend. Separate eggs and mix egg yolks (or the whole flax eggs) with milk and coconut oil. Create a hole in the center of dry ingredients and add the mixture. Mix well. Whisk egg whites until it forms peaks and fold in very delicately with a wooden spoon. Cook over low heat and add chocolate chips. Once bubbles form, flip and cook on other side. Add your favorite toppings and enjoy
