CHOCOLATE GINGERBREAD PANCAKE MIX MUFFINS

Ingredients
  • 2 cups complete pancake mix (can use Gluten-free mix)
  • 1/4 cup dark cocoa powder
  • 1/2 cup applesauce
  • 1/4 cup molasses
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 cup dark chocolate chunks
  • Gingerbread Spice:
  • 1 tsp.  ground ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground cloves
Instructions
  1. Preheat oven to 350 degrees.  Line a muffin tin with muffin liners and set aside.
  2. Add pancake mix, cocoa and gingerbread spices in a large bowl.  Mix well.
  3. In a separate bowl, mix together applesauce, molasses and milk.  Add to pancake mix and combine until a smooth batter forms.  Fold in chocolate chips.
  4. Add batter to muffin tins, about 2/3 the way full (I made 9).  Bake for 15 minutes, or until done.
