CHOCOLATE GINGERBREAD PANCAKE MIX MUFFINS
Ingredients
- 2 cups complete pancake mix (can use Gluten-free mix)
- 1/4 cup dark cocoa powder
- 1/2 cup applesauce
- 1/4 cup molasses
- 1/2 cup milk (dairy or non-dairy)
- 1/2 cup dark chocolate chunks
- Gingerbread Spice:
- 1 tsp. ground ginger
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
Instructions
- Preheat oven to 350 degrees. Line a muffin tin with muffin liners and set aside.
- Add pancake mix, cocoa and gingerbread spices in a large bowl. Mix well.
- In a separate bowl, mix together applesauce, molasses and milk. Add to pancake mix and combine until a smooth batter forms. Fold in chocolate chips.
- Add batter to muffin tins, about 2/3 the way full (I made 9). Bake for 15 minutes, or until done.
