- 150g extra dark chocolate
- 80g coconut oil
- 100g ground hazelnut
- 50g chestnut flour
- 1/2 tsp ground cinnamon
- 1 tsp baking powder
- 4 eggs or flax eggs
- 100g coconut sugar
- 1 tsp vanilla extract
In a medium saucepan over boiling water melt the chocolate with coconut oil. In a mixing bowl, whisk egg yolks (or flax eggs) with sugar and vanilla extract. Add flours, cinnamon and baking powder. Mix until well combined. Pour in melted chocolate mixture and combine again. Whisk egg whites until it forms peaks and fold in very delicately with a wooden spoon.
Transfer the batter into a prepared loaf pan. Bake in the NON preheated oven for 50 minutes on 160° (320°F). Add a chocolate sauce topping for extra yumminess.
