- 3 overripe bananas
- 1 egg
- 1/4 cup PB
- 1 1/2 cup oat flour
- 1/4 cup coconut or almond flour
- 1/2 tsp. baking powder
Preheat oven to 350F and spray a donut pan. In a small bowl, mash the bananas, whisk in the egg, then stir in the peanut butter. In another bowl, whisk together the dry ingredients. Pour the wet into the dry and stir until well combined. Put the batter into the pan (mine makes 6 donuts) and bake for 10 minutes! (You can use a plastic bag to put the batter in, cut the edge of one side, and pipe it into the pan; or just use two spoons!)
