Buckwheat crepes
- -1/2 cup buckwheat flour
- -1/2 cup oat or wheat flour
- -1/2 tsp baking powder
- -1 tbsp sugar
- -1/2 cup applesauce
- -1 cup plant-based milk
Mix all ingredients in a bowl until batter is smooth and thin, adding milk as needed to reach a runny consistency. Heat a skillet over medium heat and grease lightly. Pour a few tablespoons of batter onto the pan and tilt the pan to spread out the batter. For each crepe, cook the first side until bubbly, then flip and cook until both sides are golden brown. Remove from heat and serve with your favorite toppings.
