Bruschetta on sweet potato

Ingredients (for 2)

  • 1 sweet potato cut into rounds

Homemade salsa (“pico de gallo”)

  • 2-3 medium tomatoes
  • 1/2 onion
  • 2 garlic cloves
  • salt & pepper
  • lime juice
  • 1/2 jalapeno (optional)
  • chili powder (optional)
  • cilantro (optional)
Sweet potatoes:
  • Cut sweet potato into rounds (less than half an inch), brush some oil on top and bake at 425 until crispy
Salsa:
  • Top with homemade salsa - blend all salsa ingredients listed above in a food processor (I used a hand held food processor). You can store extra salsa to use on tacos etc.
