Ingredients (for 2)
Homemade salsa (“pico de gallo”)
- 1 sweet potato cut into rounds

- 2-3 medium tomatoes
- 1/2 onion
- 2 garlic cloves
- salt & pepper
- lime juice
- 1/2 jalapeno (optional)
- chili powder (optional)
- cilantro (optional)
- Cut sweet potato into rounds (less than half an inch), brush some oil on top and bake at 425 until crispy
- Top with homemade salsa - blend all salsa ingredients listed above in a food processor (I used a hand held food processor). You can store extra salsa to use on tacos etc.
