Blueberries & Cream Crepe Envelopes
- 1 cup rolled oats
- 2 cups oat milk
- 1 tbsp flax seeds
- (Optional: vanilla, cardamom, cinnamon or other spices of your choice)
For the filling:
- blueberries
- oat yogurt (I used blueberry oat yogurt)
- coconut whipped cream
- banana slices
- peanut butter
Place the rolled oats, oat milk and flax seeds into a blender and blend until smooth. Let thicken for 5 minutes and blend again. Heat a frying pan / pancake pan, take about ¼ cup of the batter, pour it onto the pan and spread into pancake. Cook for about 1,5-2 minutes, flip and bake the other side too. (Bake longer to make them crispier.) Fill the crepes with coconut whipped cream, oat yogurt, blueberries, banana slices and peanut butter. Sprinkle on some coconut milk powder, if you like. Enjoy!
