Beetroot Pizza with leek, thyme and a vegan cream cheese base


  • Pizza dough
  • 1 medium size beet
  • Vegan cream cheese
  • Vegan cheese
  • Piece of leek
  • Lemon zest
  • Fresh thyme
  • Truffle oil if you like


Roll out the dough, mix the vegan cream cheese with some cream and season with salt, pepper, garlic and onion powder and spread on the dough. Add some cheese. Peel and cut the beet in 0.5 cm slices. Layer on the pizza, add some leek in rings, fresh thyme and season with salt and pepper. 
Bake at 220 degree for 20-25 minutes. Sprinkle some truffle oil on top.
